Dessert Chimichangas


Okay, so this is not something new, just a variation on the Banana Burritos I've done in the past.

This time, since we were already grilling for dinner, these were cooked on the grill in a foil pan, pan uncovered, grill closed.

The one on the left contains bananas, white chocolate chips and chopped pecans. It's toppped with caramel sauce.

The one on the right contains bananas, strawberries and a little chocolate syrup inside and out.

I'm sure you could come up with many more combinations. See this post for more specific directions.

Toasted Pound Cake Dessert


Here's a really simple dessert you can just throw together.

We had a store-made pound cake loaf in the freezer from a while back, any sort of pound cake or angel food cake would work. Just cut into slices that will fit in your toaster. I topped mine with Nutella chocolate-hazelnut spread, banana slices and roasted sunflower kernels. Eddie topped his with bananas and caramel sauce.

You could come up with all sorts of combinations for this... I'm thinking sweetened or fruit flavored cream cheese topped with strawberries and chocolate sauce... Yummm.

Chunky Monkey Ice Cream

The Dad's in my life got Chunky Monkey ice cream for dessert last night!

That was after a dinner of Creamy Chicken Enchiladas.



CHUNKY MONKEY ICE CREAM

1/2 cup Egg Beaters (or 2 large eggs)
3/4 cup sugar
2 cups heavy whipping cream
1 cup 1% milk
1 teaspoon vanilla
2 large overripe bananas, mashed with 1 tablespoon lemon juice
2 tablespoons vodka
1/4 cup milk chocolate chips
1/4 cup chopped pecans

In a large bowl, whisk the eggs until light and fluffy, 1 to 2 minutes. Whisk in the 3/4 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream, milk and vanilla; whisk to blend. Stir in mashed bananas and vodka, then chill for at least 30 minutes.

Once chilled, transfer the mixture to an ice cream maker and process according to manufacturer's instructions.Once the churning is complete, stir in the chocolate chips and pecans. Transfer your ice cream into a freezeable container and freeze for a few hours.

Note: The vodka helps to keep the ice cream from freezing super hard like most homemade ice creams. This is the best ice cream base I've found so far. I will probably use this one from now on, just changing up the flavors.

Banana Muffins

Follow the link for the recipe. The blackberries didn't work with the bananas for me personally, but the banana part of the muffin was so good! Really, really good! Next time, I'm making plain banana muffins.

Banana Pecan Pancake

Yet another variation on the Big Square Pancake...



Sliced bananas in the batter, chopped pecans on top. Yum!

Cook for the full 25 minutes with the bananas.

Banana Burritos

I know what you will say....

Who puts a banana in a burrito??

You will.

Once you see that's it's a dessert, not an entree!




BANANA BURRITOS

3 medium bananas
2 tablespoons lemon juice
6 flour tortillas (8 or 10 inch size)
1/4 cup sugar
3/4 teaspoon ground cinnamon
2 tablespoons butter, melted
caramel ice cream topping

Grease cookie sheet. Peel bananas and cut lengthwise in half; brush with lemon juice. Place 1 banana half in each tortilla. Mix sugar and cinnamon, reserving 1 tablespoon. Sprinkle bananas with sugar and cinnamon. Roll each tortilla around banana; place seam side down on cookie sheet. Brush with butter. Sprinkle with remaining sugar and cinnamon.

Bake at 450 degrees for 6 to 8 minutes or until golden brown. Place on dessert plates and drizzle with caramel topping. Great with ice cream, too.

Yield: 6 tortilla rolls

Cream Cheese Banana Bread

This is a new recipe that I tried earlier this week. It makes a lighter and fluffier banana bread than I was expecting. It's really tasty but I think I would prefer it a little denser and it needs more banana flavor.

Next time, I will add more bananas and a little less flour.

Banana Pudding Parfaits

I was inspired by a recipe I found here. I had to make it quicker and easier.



I used sugar-free Banana Cream flavored instant pudding, light Cool Whip, banana slices and crushed gingersnap cookies. It's just layered in a nice glass. Done!
