Pork Loin Roll-Up Sandwiches

It's good to have leftovers!

Eddie's parents were here for dinner Friday night and we made Polynesian Pork Loin and a version of pineapple rice. So, on Sunday night we made these Roll-Up Sandwiches.

Follow this link to the Polynesian Flank Steak... we used the same marinade on the pork loin. Roll up sliced meat with pepper jack cheese, lettuce, tomato and the condiments of your choice.

For this version of pineapple rice: Cook package of yellow rice according to package directions. Meanwhile saute diced red bell pepper, diced onion and canned or fresh pineapple chunks. Mix into rice when it's done.

I also made another cute salad! I saw the cucumber and grape tomatoes set up like this on another blog - there's a restaurant somewhere that serves it like this.

Jerk Shrimp & Cuban Black Beans

Nothing new here, just favorites in a new combination.

Follow the link for the Cuban Black Beans recipe. This time served over seasoned yellow rice.

I sauteed the shrimp in McCormick Perfect Pinch Jerk Seasoning.

Black Bean and Rice Burritos

This is an easy weeknight kind of thing.

No meat, but very filling.

BLACK BEAN AND RICE BURRITOS

1 (15 ounce) can black beans, drained
1/2 teaspoon cumin
1/4 cup salsa
1 bag “boil-in-bag” rice or small package yellow rice
4 large flour tortillas
sour cream
Monterey Jack cheese, shredded
salsa or chopped tomatoes

In a saucepan, combine black beans, cumin and salsa. Heat thoroughly. Meanwhile, cook rice according to package directions. Mix cooked rice and black bean mixture. Spread sour cream on each tortilla. Spread rice and bean mixture on each tortilla. Roll up tortillas on microwave safe plates. Cover with chopped tomatoes or salsa and then cheese. Microwave individually for about 2 minutes or until cheese is melted.

Yield: 5 or 6 servings (depends on how fat you like your burritos)

That's how I like to configure my burritos and I just roll them up with open ends. I eat them with knife and fork. Eddie prefers to put everything inside, then attempts to roll them up, including folding in the ends. They fall apart as he eats them by hand. Whatever works for you!

I really like Newman's Own pineapple salsa for this!

Simple Pineapple Rice

Our delicious dinner last night.....

I make a Pineapple Fried Rice that gets a little complicated when your short on time. So, I came up with something easier. I served sauteed Caribbean seasoned shrimp on top of it and we had Spicy Caribbean Pumpkin Soup on the side (I had this pre-made in the freezer and just microwaved).

This dinner only takes the amount of time that it takes the rice to cook, about 25 minutes. When the rice is almost done, you can put on the shrimp, they only take about 5 minutes to cook.

SIMPLE PINEAPPLE RICE
1 cup chopped red bell pepper
1 cup chopped onion
1 small can pineapple tidbits, drained
1 cup regular rice
1 teaspoon ham seasoning base (Better than Bouillon)

Cook the rice according to package directions, with the addition of ham seasoning in the water.

While the rice is cooking, saute the red bell pepper, onion and pineapple until onion and pepper are tender.

When the rice is done, stir in the pineapple mixture.

Yellow Rice, Ro-tel, Black Beans & Chicken

This is hardly a recipe, more of a list of things to serve together. It's easy to keep most of it on hand for a quick meal.

YELLOW RICE, RO-TEL, BLACK BEANS & CHICKEN

1 can black beans, rinsed and drained
1 can Ro-tel tomatoes and green chiles
1 package yellow rice
2 cups shredded cooked chicken

Mix black beans and Ro-tel in a small sauce pan and heat. Add any spices you like. I sometimes add cumin and/or chipotle chile powder.

Cook rice according to package directions.
Cook chicken and shred or use leftover chicken of some kind.

To serve: Place rice portion on plate and top with chicken and then black bean mixture. Top with cheese if you like.

Pineapple Fried Rice

We decided to have a tropical dinner out on the deck last night. When I say tropical, that would include anything Hawaiian, Caribbean and Mexican, too. Tropical usually means seafood for me as well. So, we had a little of all that tropical stuff.

We had blackened shrimp, pineapple fried rice and black beans.

For the black beans, I just drain a can of beans, add a couple big spoonfuls of salsa and a sprinkle of cumin. Is that not the authentic Cuban way?? Maybe not, but I like it!

A tropical drink would be great with this meal, too. Have a mojito, margarita or daquiri!

PINEAPPLE FRIED RICE

2 tablespoons oil
1 cup diced pineapple
1/2 cup chopped yellow onion
1 cup diced ham
1/2 cup diced red bell pepper
1 garlic clove, minced
1/4 cup soy sauce
2 cups cooked rice
2 tablespoons chopped fresh cilantro

Heat oil and stir fry next 5 ingredients until onions are soft. Add cooked rice and soy sauce and stir fry until hot throughout. Remove from heat and toss in fresh cilantro.

Note: You can use fresh or canned pineapple, either one tastes great in this.
