Cranberry Pecan Chicken Salad



CRANBERRY PECAN CHICKEN SALAD

1/3 cup light mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon rosemary, minced
2 cups chopped or shredded chicken
1/4 cup chopped pecans
1/3 cup diced Granny Smith apple
1/2 cup dried cranberries, roughly chopped
11/2 tablespoons diced onion
salt and pepper

Mix together mayonnaise, apple cider vinegar, and rosemary.

In a large bowl, combine shredded chicken, pecans, apple, cranberries and onion. Toss with dressing until well combined.

Season to taste with salt and pepper. Chill for at least an hour until ready to serve.


By the way, I cheated and used canned chicken and I'm okay with that!!

Cranberry Avocado Salad



A delicious salad combination!


CRANBERRY AVOCADO SALAD

fresh spinach leaves
avocado slices
dried cranberries
honey roasted sliced almonds
mix of 2 commercial salad dressings (poppy seed and balsamic vinegar)

Mix in desired portions and proportions!

Fun with X-Rays

So, you can tell that I am loving my new career choice (I graduate in May!)..... My crafting efforts are even starting to revolve around x-rays, skeletons, bones and skulls.

Oven mitt from the Dollar Tree... Made my own stencil with freezer paper.



One of my clinical sites has lots of old x-rays laying around. They let me take them home as long as I remove all of the patient and hospital information first. I cut the x-rays to fit and just glued them on to the lampshade. There are actually four different images around the shade. (Let this picture also serve as a preview to my new home office that I'm working on.)















This t-shirt was the first thing I made with a freezer paper stencil and fabric paint. It's so easy! Google it!

I made this one to wear to a Halloween party. Yes, I know, it's a little naughty. I have some crazy friends that appreciate that!
